Since buying from www.azurestandard.com I have taken an interest in organic packaged legumes that are grown right on the farm in Oregon. What to do with these little fiber packed goodies? Sloppy Lentils! I have to say I was very skeptical that my family would like this meal or that even I would(hard to believe since I like mostly anything.) But it was a HIT! It makes a lot,so we had leftovers which were great the next day.
Sloppy Lentils
serves 4-6
1 T olive oil
1 med yellow onion
1 small red bell pepper,chopped(or green)
1 T chili powder
1 1/2 cups dried brown lentils,picked over and rinsed
1 (14 1/2 ounce) can crushed tomatoes
3 cups water
2 T tamari or soy sauce
1 T prepared mustard
1 T light brown sugar
1 t salt
fresh ground pepper
1. Heat the oil in a skillet over med heat,add in onion and bell pepper,cover and cook about 5 minutes,until softened.
2. Add in the chili powder,stirring to coat.
3. Transfer mixture to a large pot,add in the lentils,tomatoes,water,tamari,mustard,brown sugar,salt, and pepper,stir to combine.
4. Cover and cook till lentils are softened- 45-1 hour.
5. Serve on warmed buttered buns.
*may also use in crock pot-8 hours on low*
